Somehow brand names can sell products at ludicrous prices. $350 Van Staal pliers are an great example of that.

No fillet knife is worth $300. I defy anyone using it to out-fluke fillet me using this knife or any other high-priced model, while I use my trusty S2333-9 carbon steel Dexter. I’ve only bought two of those in my entire life. The first one was still serviceable after close to 50 seasons. But last Spring I thought, meh, let’s get a new one and retire the original to kitchen duty. Where it shines, by the way. My wife is real leery of it though. Too big and way too sharp for her, I guess.

In any case, For a “custom” knife over say $50 I’d definitely want to know the specific type of steel used, the tempering method, and the final HRC Hardness rating. Maybe I missed it, I didn’t see any of that in the accompanying blub. Hard pass.

Love my Dexter flexible and wide filleting knives, oyster knife, clam knife and scallop knife. Crap like this also drives me nuts.
