I don't know man. I'm not a fan of trying to push that knife through the middle of the fish while holding it with the other hand.... That seems like the making of a bad situation to me ?‍♂️ ?‍♂️
I lay the fish flat on the table and just use the point of a super sharp blade to get thru the skin and underneath it to then cut the whole side off the rack

looks to me the video shows a talented fellow doing it the best way… i like the way he dosent remove the filet off the tail and use the fish for a good grip when skinning… ??

That’s a very popular method in Florida where triggers are more common, especially in the Keys, that was where I first saw it. Obviously you should try your best not to stab yourself with the knife but everyone’s knife skills are different. If that’s a possibility then I don’t recommend doing it that way.
