If you get one of those rotisserie chickens from any store, cut it up and enjoy the pieces you like.
Eat all but one of the breasts.
Keep all the bones including the carcus and put into a pot covered with water. 2 quarts.\
Boil the bones for three hours.
Strain it twice with thin ( very small holes) strainer, into another pot
Now you have broth.
Cook some egg noodles in it and after removing the skin from the breast you saved, rip it up by hand into small pieces and add to your broth.
Simmer for another hour and boom..... you got some awesome chicken soup.
I should have taken a picture , it was the best Soup I ever had.
It’s easy.
Try it, you’ll like it.

If you have a crock pot you can make the stock in it overnight. It makes the best broth. I just bought a roaster for Sunday. I'll be making broth Sunday night.

my brother in law makes a terrific Turkey soup the day after Thanksgiving - the remains of the turkey carcass goes into a ***HUGE*** pot whole with whatever other scraps are left - adds all sorts of vegetables & rice & God knows what else.
It's truly great..........
