Fairly common occurrence in cows when they lie dead for a while, the blood collects down by the tail and belly and you get that effect. Show they didn't bleed the fish, which is a damn shame because you'd really want to do that on a monster like that if you had any intentions of dining on it. If it's destined for a wall, then no biggie...
