I was at a fish market yesterday and they were cleaning a big striper. I a bowl they had this huge sack of roe that came from the striper. They obviously saved it.

All feelings that you may have on wishing that striper could have laid eggs aside......

Can you eat striper roe? How would you cook it?

What other local fish have eatable roe?

Yes you can, although I've never caught one with mature roe inside to try. I would prepare it just like I prepare weakfish roe which is excellent, pan fry in butter or fry with bacon fat from the bacon I would serve with it. Just use any shad roe recipe...
