I’ll make porgies a few times a year if I fillet them. I find many guys leave in rib bones or just slice right through them in their haste.
Most times we come back to the dock with a load of porgies the guys that I NEVER see at the fish cleaning table look down at us for having them. Many peeps complain they are too "boney". Clearly they do not know how to cook them whole or fillet them properly.
When fresh, they make some of the best fried fish sandwiches and tacos👍👍

I cut about 1/4” higher above the ribs to make sure I get out ALL of those little bones. Smaller fillet, but no bones.

Taste wise:
Northern Kingfish (caught two all last summer, lol)
Winter Flounder (although virtually extinct in south shore bays)
Sea Bass and Tautog (although size limit means I only eat them in restaurants. Caught 50 of both under the Big M with one keeper a few years back. I don't torture the little fishies anymore.)
Weakfish
Fluke
Snappers on the barbie

I wish I knew how to target them ! And on my little light fluke and weakfish setup they even put up a decent scrap.We usually catch a bunch of little ones while porgy fishing in the peconics.
This years trip a couple of weeks ago the only by catch we got were sea robins....
