Does anyone have any experience, or thoughts on using a Chinese tuna fillet round belly knife?

Interesting! I think that it might take some time to get used to that knife.
Also, I thought I had relatively sharp knives. Those had to be the sharpest knives I have seen.

It sure looks effective. But I'm thinking it will take a while to get down. It's get one if I was back in the day, but my tuna days are far and few.

I thought I was pretty good at cutting fish, but these guys are masters!

And the final product had me drooling!!! What do you think a plate of prime sashimi like that cost here...at least $150-200, maybe more.

I'm impressed at the constant cleaning of the cutting board & knives, the real skill is cutting a porgie, sea bass, or blackfish in a rocking boat.

How True.
It's a miracle I still have all ten digits left. Hope I didn't just jinx myself!!
