Crudo

These were simpler.

Weakfish crudo with fresh lemon juice, olive oil, fennel fronds and sea salt.

Striped bass crudo with fresh lime juice, olive oil, fresh mint and sea salt.

I like to put the acid down first and then the fish, followed by the olive oil, salt and herbs. Flaky sea salt gives a nice crunch.
